HobbiesAnyone who's been around me lately knows that my #1 hobby at the moment is cookingin particular, baking. I spend many hours in the kitchen, trying new recipes and tweaking old ones. In a way, it's sort of a natural progression from my scientific background. After all, baking is, in a sense, a science and recipes are nothing but formulas (although I did flunk chemistry). Ahh...just chalk it up to watching way too much Food TV. Gluten-Free CookingFor awhile, I was doing a lot of gluten-free cooking for my former girlfriend Emily who has Celiac Disease. Celiacs have an inability to digest and process gluten, a protein found in wheat, oats, barley, and rye. Gluten is the substance that makes most baked goods hold their shape and allows yeast to make bread dough rise. Needless to say, gluten-free baking means entirely re-thinking the way you go about traditional baking. However, all is not lost.
